Around here there are always leftovers, Hubby takes many of them to work in his lunches, but even still there's stuff left behind.  Many of them are too small in quantity to reheat even as a lunch.  Here are some of our favorite ways to use them up.

Stir fry's - great for using up leftover rice, veggies, and small quantities of meat.  I just toss it in a skillet or wok and heat it up and then mix in a little sesame oil, soy sauce, garlic and ginger (if I have it) 

Omlettes for breakfast - again great for veggies, and small bits of meats - anything goes for omlettes and sometimes we even have them for supper.  I serve them with potatoes and call it done.

Beefy onion casserole - This one is a favorite when I've made french onion soup and we have lots leftover.  I will pull out some of the broth and thicken it to gravy consistency, then I'll chop up some of the onions in the soup, add a little ground beef (usually leftover as well), and some carrots and celery and put in a casserole dish with the gravy, then I top it with mashed potatoes (I've also just mixed in rice) and bake until bubbly, then I serve it with a little bit of cheese and usually another veggie for variety.

Casseroles - you can make a casserole out of virtually any meat/veggie/starch combo you have around.  I usually just use cream of mushroom soup as my sauce to hold it together.

Goulash - basically pasta, veggies, a little meat (if you have it) and either a creamy gravy or a meat based gravy for sauce - My boys love this with funny shaped pasta.

My husband is a wonderful cook. I could give him a basket of stuff, like on "Chopped" and he can create a gourmet meal.

He often makes some sort of quesadilla withe leftovers. We had grilled chicken one night with asparagus and the next day he made the leftovers into quesadillas. He added chz and sauteed onions and it was divine!

Great ideas...Keep them coming, please! I am in a pickle with leftovers. I am not a good--or creative--cook, plus I have never been able to stand most leftovers (some things I can do, but not most). Hubby usually can't take it for lunch because he doesn't have a microwave to heat it up. I think "recycling" it into a totally different meal is a really great idea that I think I would be able to eat.

Quiche is another great way to use up leftovers.  You just make the 'custard' from eggs and milk  put some meat/veggies in a pie crust cover with the 'custard' and bake till it's done.  You could also add cheese to it as well. 

I am always looking for new ways to use up leftovers because I habitually make at least one extra serving of our meals (I would hate for someone to go to bed hungry becuase I didn't fix enough)

With chicken I can usually shred it up and make enchiladas, tacos/fajitas, or chicken soup! Or you can make a roux, add your chicken, some chicken stock and seasoning and a bag of steamfresh veggies and pour it over rice.

We always keep rice and tortillias on hand. Anything can go over rice to strech it and you can usually throw anything in a tortillia and it is good! Hence the name Fernandez! lol! Really, my hubby is part Phillipino, Chinese, Mexican, and Spanish (his grandpa and grandma came from Spain and his mom came from the Phillipines) My children are "other" lol!

You are very right Carrie!  Anything can be served over rice or in tortillas!  I also find that many things can be served over Grits!  No I'm not from the south, but I lived there a while and found that I loved Shrimp and Grits, however shrimp is often out of my budget so I use chicken most of the time with the same seasonings and the flavor is just as good. 

Leftover baked potatoes usually become potato salad or hashbrowns. 
Leftover pasta becomes a fritatta, or pasta bakes, or casseroles, or a base for some sort of stew
